Banana Muffins

Wondering what to do with those overripe bananas that no one ate, or maybe you stashed them in the freezer for later? Well, frozen bananas work great! Even though the skin might turn all black, the inside is exactly what you need for baking and smoothies. It's like they're tailor-made for delicious treats!



Ingredients

2 cups Self-raising flour

1/4 teaspoon Baking powder

1/2 cup Brown sugar

1/2 cup Milk

2 Eggs

60g Butter, melted and cooled

2 Bananas, ripe & mashed

1 teaspoon Vanilla extract

1 cup (200g) Choc chips


Method

Preheat your oven to 180°C. Line your muffin tins with paper cases.

Add your flour, baking powder and sugar to a mixing bowl, stir to combine.

Add you milk, eggs and butter to a jug and whisk to combine.

Add the milk mix, mashed banana, chop chips and vanilla to the flour mix, stir to combine but only a quick mix, don't overmix.

Spoon your mixture into the muffin cases and bake for 15-20 minutes.


- You can replace the chop chips with a cup of fruit like berries, or nuts or even oats! Be creative and play around to get the taste your family loves.
