Fish Cakes

Fishcakes


Ingredients

500g Firm white fish

Salt & pepper

1 Onion, finely diced

1 tablespoon Butter

2 tablespoons Coriander, finely diced

1 cup Potato mash

Dash of Tabasco

2 Eggs

1 tablespoon Lime juice


Method

Check to make sure you have no bones in your fish, then steam your fish till just cooked and flake with a fork. Again check and make sure there are no bones or skin in your fish.

In a saucepan heat your butter and fry your onion till soft and translucent.

Add your fish, onion, coriander, mash, tabasco, eggs, lemon juice, salt, and pepper to a large mixing bowl and lightly mix to combine.

Divide into 4 -6 equal balls and then press lightly into a patty shape. Sprinkle some flour over both sides of the patties, and refrigerate for 30 minutes.

Heat some oil in a frying pan and carefully lift the patties into the pan and fry till golden on both sides. Fishcakes you have to work a little carefully with so they don't break when turning over, so work carefully.


Yogurt Sauce


Ingredients

1 cup Greek yogurt

1 tablespoon Lemon juice

1 tablespoon Fresh flat leaf parsley, finely chopped

1 teaspoon Capers, rinsed, finely chopped

1 teaspoon Carrot, grated


Method

Mix all the ingredients together and refrigerate till needed.
