Ingredients
500-600g Firm white fish
1 teaspoon Salt
1 teaspoon Garlic powder
1 teaspoon Onion powder
1/2 teaspoon Black pepper
1/2 teaspoon Paprika
2 Eggs, whisked
1 cup Flour
2 cups Desiccated Coconut
Oil for frying
Method
Cut your fish into fingers, as big as you prefer.
Add the salt, pepper and spices to your flour and mix to combine. You can also just season the flour with salt and pepper.
Dust the fish in the flour, shake of the excess flour, now dip in the egg and lastly dip in the coconut.
Place fish on a baking tray and refrigerate for 30 minutes.
Heat some oil in a frying pan, about 1cm deep and fry your fish in batches till golden brown on each side.
Place on kitchen paper and drain.
Here is two sauces you can serve with your fish.
Honey-mustard Dipping Sauce
Ingredients
1 cup Mayonnaise
4 teaspoons French mustard/Wholegrain mustard
4 teaspoons Honey
Method
Mix all the ingredients together and refrigerate till needed.
Pink Sauce
Ingredients
1 cup Mayonnaise
1/4 cup Tomato sauce
4 drops Tabasco/Sriracha sauce
1/2 teaspoon Garlic powder
1/2 tablespoon Lemon juice
Pinch of salt
Method
Add all the ingredients to a bowl, whisk to combine, taste and season if needed.
Refrigerate till needed.
