What to do with all your leftover festive food? Why not transform your leftover Christmas food into delicious fritters?
Ingredients
5 cups Leftover food chopped into smaller pieces - for example ham, chicken, turkey, mash potatoes, carrot, broccoli, corn etc.
1 tablespoon Wholegrain mustard
1/2 cup Grated cheese
1/2 cup Self-raising flour
1/2 teaspoon Salt
2 Eggs, whisked
Some oil for frying
Method
In a spacious mixing bowl, blend together the assorted leftovers, mustard, cheese, flour, salt, and egg. Gently stir until well combined.
Heat a small amount of oil in a generously sized non-stick frying pan. Spoon portions of the mixture into the pan and cook until both sides turn a golden brown hue.
Transfer the cooked portions onto kitchen paper to soak up any surplus oil.
Serve the dish while still warm, accompanied by a side of either mayonnaise or mustard.
