Mediterranean Chickpea Salad

Chickpeas, also known as garbanzo beans, are a great source of nutrition and have numerous health benefits.

Overall, chickpeas are a nutrient-dense food that can be incorporated into a healthy and balanced diet.


425g Tinned chickpeas, drained & rinsed

1 punnet Cherry tomatoes, halved

1/2 Cucumber, chopped

1/2 Red onion, thinly sliced

1/2 cup Olives, sliced in half

100g Feta cheese, crumbled

2 tablespoons Fresh coriander, chopped

Salt & pepper


125ml Extra virgin Olive oil

60ml Lemon juice

1 tablespoon Fresh coriander, finely chopped

1 tablespoon Honey

1/2 teaspoon Dijon mustard

Salt & pepper


Place all the dressing ingredients in a small bowl, whisk well, then taste and season.

Combine all the salad ingredients and toss to combine.

Drizzle with the dressing and serve.
