Mushroom Gnocchi

While traditional potato gnocchi is a classic choice, don't be afraid to experiment with different pasta options. If you're in the mood for a change, you can easily replace the gnocchi with your favorite type of pasta. Whether it's penne, linguine, or even farfalle, the mushroom sauce will effortlessly coat any pasta shape, allowing you to customize the dish according to your preferences.


Garlic Bread Alternative: A Fresh Twist

Garlic bread is undoubtedly a crowd-pleaser, but if you're looking to lighten up your meal or add a refreshing element, consider serving mushroom gnocchi with a nice green salad. The crisp and vibrant greens, combined with a tangy dressing, create a perfect contrast to the savory flavors of the gnocchi. Experiment with different leafy greens, such as arugula, spinach, or mixed lettuce, and add your favorite vegetables for a personalized touch.

Ingredients

500g Potato Gnocchi

1/2 Onion, diced

2 Garlic cloves, crushed

250g Button Mushrooms, sliced

120g Baby spinach leaves

300ml Cream

1 tablespoon Wholegrain mustard

Salt & pepper

100g Parmesan cheese, grated


Method

Heat a little oil in a frying pan. Add the onion and fry till soft and fragrant, add the garlic and fry for a few minutes.

Add the mushrooms, season with salt and pepper, and fry for 5 minutes or until browned.

Add the mustard and stir to combine.

Add the spinach and cream and cook for a few minutes.

Season with salt and pepper.

Heat a pot with water and bring to a boil, when it's boiling add the gnocchi and cook till the gnocchi float to the top of the water. This will only take a couple of minutes. Drain well.

Add the gnocchi to the sauce and stir to combine.

Top with the parmesan cheese when serving.
