Ingredients
500g Potato Gnocchi
1/2 Onion, diced
2 Garlic cloves, crushed
250g Button Mushrooms, sliced
120g Baby spinach leaves
300ml Cream
1 tablespoon Wholegrain mustard
Salt & pepper
100g Parmesan cheese, grated
Method
Heat a little oil in a frying pan. Add the onion and fry till soft and fragrant, add the garlic and fry for a few minutes.
Add the mushrooms, season with salt and pepper, and fry for 5 minutes or until browned.
Add the mustard and stir to combine.
Add the spinach and cream and cook for a few minutes.
Season with salt and pepper.
Heat a pot with water and bring to a boil, when it's boiling add the gnocchi and cook till the gnocchi float to the top of the water. This will only take a couple of minutes. Drain well.
Add the gnocchi to the sauce and stir to combine.
Top with the parmesan cheese when serving.
