Chorizo Frittata


Here is an easy brunch recipe that is perfect for a lazy weekend morning!


Ingredients

250g Cocktail tomatoes, halved

2 Chorizo sausage, thinly sliced

1 Onion, diced

2 Garlic cloves, crushed

100g Feta cheese, crumbled

1/4 cup Sun-dried tomatoes, chopped

2 tablespoons Fresh basil leaves, chopped

8 Eggs

1/2 cup Cream

1/4 cup Sour cream

1/2 cup Parmesan cheese, grated


Method

Heat your oven to 180°C.

Use an ovenproof frying pan and add some oil and heat over medium heat.

Add your chorizo and fry till golden on each side, transfer to a plate lined with a paper towel.

Add the onion to the pan and fry till soft, add your garlic and fry for another minute. Transfer to a bowl.

Take the pan off the heat.

Arrange half the chorizo to the bottom of the pan and top with half the onion & garlic mixture. Add a layer of tomatoes and half the feta cheese, and top with the sun-dried tomatoes. Continue to layer till your ingredients are finished.

Whisk your eggs and cream in a jug, add the basil leaves, and season with salt and pepper. Pour over the chorizo mixture.

Turn back on the heat to medium, and cook for about 4-6 minutes until the base is set.

Top with the parmesan cheese.

Turn on the grill, place the pan under the grill, and cook another 3-5 minutes until the top is set and golden.
