Apple & Oat Muffins

This is a perfect lunchbox filler or breakfast muffin, sweet and savory at the same time.


2 cups Self-raising flour

3/4 cup Brown sugar

1/2 cup Rolled oats

1/2 teaspoon Ground cinnamon

3/4 cup Cheddar cheese, grated

1/2 cup Vegetable oil

2/3 cup Milk

2 Eggs

1 Apple, coarsely grated

2 teaspoons Honey


Heat your oven to 180°C, and, line your muffin tin with muffin papers.

In a bowl combine the flour, sugar, oats, cinnamon and cheese, and make a well in the center.

In a jug add the oil, milk, egg, and apple, whisk well.

Add the oil mixture to the dry ingredients and mix until just combined, don't overmix.

Spoon into the muffin papers, and bake for 20-25 minutes till cooked through.

Heat your honey for a few seconds in the microwave and brush the tops of the muffins with the warm honey.
