Ingredients
Olive oil
200g Bacon, diced
3 tablespoons Red onion, finely diced
1 teaspoon Garlic, crushed
250g Zucchini, grated coarsely
200g Corn, frozen or tinned
150g Grated Cheddar cheese
1 teaspoon Freshly chopped parsley/coriander
2 Eggs, lightly beaten
1 ½ cups Self-rising flour
1 cup Milk
Method
In a large frying pan heat a little oil over medium heat.
Add the bacon and fry until golden, it will take 5-6 minutes.
Add the garlic and onion and cook till the onion turns soft.
Remove from the heat.
Coarsely grate the zucchini, and use your hand to squeeze as much as possible liquid out of the zucchini.
In a bowl combine the bacon, corn, zucchini, cheese, garlic, egg, milk, and flour.
Season with salt and pepper and combine to make sure everything is mixed well.
In the same pan, add some more oil and heat over medium-high heat.
Add heaped tablespoons of mixture into the pan, and flatten with your spatula slightly.
Cook till golden on both sides.
