Chocolate Oats Cookies

Ingredients
55g Unsalted butter
300g White sugar
120ml Milk
1/4 cup Cocoa powder
170g Smooth peanut butter
1 tablespoon Vanilla extract
3 cups Rolled oats
1 cup Desiccated coconut
Pinch of salt
Method
Combine butter, sugar, milk, and cocoa powder in a medium saucepan over medium heat.
Whisk continuously until the butter is melted. Bring the mixture to a boil, whisking occasionally. Once boiling, let it boil for 1 minute without whisking. Remove from heat, then immediately stir in peanut butter and vanilla extract until fully combined.
Add oats, coconut and salt, allowing the mixture to sit for 5 minutes to let the oats absorb moisture.
Meanwhile, line two baking sheets with parchment paper or silicone baking mats, ensuring there's enough space in your refrigerator for the sheets.
Drop tablespoons of dough onto the lined sheets. Optionally, gently flatten with the back of a spoon.
Refrigerate the cookies for 30-60 minutes to set. Once set, remove from the refrigerator.
Store any leftover cookies covered in the refrigerator for up to 1 week.
