One Tray Family Meal - Chicken & Vegetables

Here’s an easy weekday dinner for those nights when time (and energy) is in short supply. This one-pan chicken and veggie bake is healthy, hearty, and comes together with minimal effort — so you can get dinner on the table and still have your evening to yourself.

Ingredients - serves 4
4 Chicken thighs, deboned - or any cut you prefer
500g Baby potatoes, washed and cut in half
1/2 cup Broccoli florets
1/2 cup Zucchini, sliced
1 cup Carrots, peeled and sliced
2 tablespoon Olive oil
1 tablespoon Fresh. lemon juice
1 teaspoon Garlic powder
1 Fresh rosemary sprig - can use any fresh herbs you have on hand
Salt & pepper to taste
Optional: grated Parmesan for serving
Method
Preheat your oven to 180°C.
Line a large baking tray with baking paper - this way you don't have a difficult cleanup
In a bowl, combine chicken, potatoes, and veggies.
Drizzle with olive oil and lemon juice, sprinkle over garlic powder, herbs, salt and pepper. Toss to coat.
Spread evenly on the tray in a single layer.
Bake for 30-45 minutes, tossing halfway, until chicken is cooked through and veggies are golden and tender.
Optional: Sprinkle with Parmesan and place back in the oven for a few minutes.

✔ Speed it up: Use pre-cut veggies or baby potatoes — no peeling!
✔ Fussy eaters? Let the kids help toss the tray — they’re more likely to eat it.
✔ Leftovers? Chop them into a wrap with cheese for an easy lunchbox filler.
✔ Make it special: Add a drizzle of honey-mustard before serving.
