I love a good sandwich or wrap! With so many of us working from home, it's easy to stock the right ingredients (with a little bit of planning) and save some money with no more expensive take-outs.
A favorite in our house is a chicken mayonnaise sandwich, it's great fresh or toasted on a sandwich, bread roll, or wrap! You can even make a quick salad and add some of the chicken mayo for a more filling salad.
Ingredients
Chicken Filling
4 Cooked chicken breasts
240g (1 cup) Mayonnaise
2 tablespoons Sweet Chilli sauce
1/4 Red onion, finely diced
2 tablespoons Gherkins, finely diced
Salt & pepper
Bread of your choice
Lettuce
Tomato
Method
You can dice your chicken by hand or place the chicken in a bowl and use your hand mixer on low speed to break the chicken into shreds.
Mix your chicken, mayo, sweet chili, onion, and gherkins in a bowl and season with salt and pepper.
Your chicken mix can stay in the fridge for 3-4 days, ready for when you want to make your sandwich
Fresh sandwich - lightly butter your bread, top with lettuce, tomato, and then the chicken filling. Close your sandwich with the other slice of bread.
Toasted sandwich - top your bread with the chicken filling, top with tomato, and some grated cheese. Close your sandwich with the other slice of bread, place in your sandwich press, and grill till golden brown.
