Ingredients
1-2 tbsp Sesame or Peanut oil
2 cm piece Fresh ginger, finely grated
1 Carrot, finely diced
1/2 Onion, diced
1 Clove garlic, finely chopped
500g Pork mince
1 tbsp Lime juice
2 tbsp Oyster sauce
1 tbsp Light soy sauce
1/2 teaspoon White sugar
2 tbsp Coriander, chopped
1 Cos lettuce, leaves separated, washed and dried
4-6 Spring onions, thinly sliced
1 Red chilli, deseeded, sliced
Method
Heat the oil in a large frying pan over medium-high heat.
Add the carrot and onion and cook until softened. Stir in the ginger and garlic, cooking for about 30 seconds until fragrant.
Add the pork mince and cook, breaking it up with a wooden spoon, for 5 to 10 minutes or until golden brown.
Pour in the Chinese cooking wine, oyster sauce, lime juice, sugar, and soy sauce. Season with salt and pepper.
Let it cook for another 5 minutes, stirring occasionally, until the liquid is absorbed.
Stir through the chopped coriander and remove from heat.
Spoon your mince mix into the lettuce cups and then sprinkle with the sliced red chili and spring onion.
