Ingredients
500g prawns – peeled, deveined, tail off
15ml oil
2g ground coriander
2g ground cumin
200g onion, diced
6g garlic, chopped
1 Green chili, chopped
400g Tinned tomato
10g Tomato paste
15-30ml water
3g fresh coriander, chopped
3g white sugar
3g salt
1g black pepper
10-15ml lemon juice (adjust to taste)
Method
Heat oil in a pan over medium heat. Add ground coriander and cumin, stirring for 30 seconds until fragrant.
Add onion and cook for 3-4 minutes until softened. Stir in garlic and green chili, cooking for 1 minute.
Add tinned tomato and tomato paste, sugar, salt, and pepper. Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens. Add water if needed.
Toss in the prawns and cook for 2-3 minutes until pink and just opaque.
Stir in lemon juice and fresh coriander, taste, and adjust seasoning. Serve hot with savory rice.
