Spicy Thai Mango Salad

Ingredients
1 Cucumber, julienned
2 Carrots, julienned
1 Mango, julienned or sliced
1 punnet Cherry tomatoes, halved
1/2 cup Cashews
1/2 cup Coriander, chopped
1 Lime
Dressing
4 tablespoons Soy sauce
2 tablespoons Maple syrup
2 Garlic cloves, minced
1 Red chilli, finely diced
2 Limes, juiced
Method
Combine all the dressing ingredients in a small jug and whisk well.
Toss all the salad ingredients together in a large bowl, pour over the dressing, and toss to coat.
Slice the lime into wedges and serve with the salad.
