An easy weekday meal with it's roots in Mumbai but many versions found all over the word.
Ingredient
1-1.2kg Chicken pieces
50ml Vegetable oil
2 Garlic cloves, finely chopped
5cm piece Ginger, finely chopped
2 Onions, thinly sliced
1 Red chili, finely chopped
2 teaspoons Garam masala
1 teaspoon Curry powder
60g Tomato paste
250ml Water
30ml Orange juice
2 tablespoons Brown sugar
10-12 Dried apricots
Salt & Black pepper
Method
Heat the oil in a large saucepan over medium heat.
Add the onion and fry till soft and fragrant.
Add the garlic, ginger, chili, curry powder and Garam masala and fry for a few minutes.
Add the chicken pieces and season with salt and black pepper, fry for 5-10 minutes but make sure not to burn the chicken.
Add the tomato paste and water and bring to a boil, turn down the heat to a simmer, cover with a lid and let it simmer for 20-30 minutes.
Add the orange juice, sugar and apricots and simmer for another 10-15 minutes.
Taste & season if needed.
Serve with some fragrant Jasmine rice or maybe pearl couscous.
