Maybe you are wondering what is hutspot? Hutspot is a very traditional Dutch dish made from potatoes, carrots and onions. But you can also use combinations with kale, spinach or endive and they are all lovely! Traditionally they serve this dish with smoked pork sausage or smoked bacon. You can also serve hutspot with meatballs and a nice rich gravy or even a nice slow-cooked stew.
Ingredients
600g Potatoes peeled and chopped
600g Carrots peeled and coarsely grated
1 Vegetable stock block
250g Onions, finely diced
50g Butter
100g Parmesan Cheese grated, optional but delicious
100g Bacon cut into small cubes and fried to golden
100ml Milk - use as much as needed
Salt & Pepper to taste
Method
Add your potatoes and carrots to a medium pot, cover with water and the vegetable stock, bring to a boil.
Then turn down the heat to a simmer and let it simmer for 20 minutes till the potatoes are tender.
While it's cooking heat some butter in a frying pan, add the bacon and fry till crispy, scoop out and keep for later.
In the same pan add the onion and fry till fragrant and slightly caramelized.
When the potatoes are tender, drain the extra water, add the rest of the butter and then mash till it's all nice and smooth or if you like it a little lumpy that's fine too!
Taste and season with salt and pepper if needed, stir through the bacon and enjoy!
