For many years, I've relied on this vegetarian recipe that holds its shape and boasts delicious flavors.
Ingredients
2 Medium Sweet potato, peeled and roughly chopped
1 Onion, roughly chopped
2 Garlic cloves, halved
460g Chickpeas canned, rinsed and drained
½ teaspoon Paprika
½ teaspoon Curry powder
1 teaspoon Salt
2 teaspoon Ground Cumin
½ cup Chopped parsley
1 cup Breadcrumbs
2 tablespoon Olive oil
2 Eggs
Method:
Heat oven to 180°C.
Toss the sweet potato, onion, and garlic with the oil in a bowl.
Place the mix on a baking tray and bake for 15-20 minutes or until soft and starting to brown on the edges.
Place the chickpeas, sweet potato, onions, garlic, paprika, curry powder cumin, parsley, and salt in a food processor.
Pulse a couple of times, you want it to be a coarse mix but not a paste.
Transfer to a large bowl, add eggs and 1 cup of breadcrumbs, and mix well.
See if you can form a patty, if the mix doesn't hold shape, keep on adding tablespoons of breadcrumbs till the mixture can easily be formed into patties.
Line an oven tray with baking paper. t
Use a scale to measure 180g of mix.
Form into the patties, place on a tray, and refrigerate for 30-45 minutes. Don't skip this step, the patties need to be set properly, before cooking.
If you want to freeze them, wrap them in cling wrap and freeze. Defrost completely before you cook them.
Building the perfect burger is a matter of personal preference, but here are some general tips to help you create a delicious burger:
Cook the patties: Heat some oil in a non-stick pan, add the patties and fry till golden on each side, they are soft so be careful when flipping them.
Add cheese: If you like cheese on your burger, add a slice of your favorite cheese to the patty during the last minute of cooking to melt it.
Toast the bun: Toast the bun on the grill or in the oven until it is lightly crispy.
Add toppings: Add your favorite toppings, such as lettuce, tomato, onion, pickles, bacon, or avocado.
Add condiments: Add your favorite condiments, such as ketchup, mustard, mayonnaise, barbecue sauce, or hot sauce.
